When Locale Boulder announces a guest pizzeria takeover, it’s best to make a reservation immediately. I’ve had the pleasure of attending four takeovers, one of which led me to hop on a plane to Flagstaff to visit the original location: Pizzicletta.
The May 3rd takeover by Pasquale Jones has me very excited about my upcoming trip to NYC as I’m going to dine at the original. For the time being, all I know about Pasquale Jones is based off of a packed-house of a dinner party of pizza, wine, pork shanks, and the hardest working pizza crew I’ve seen in recent memory.
Seated front and center at the pizza bar, I had little distraction from the boisterous crowd that filled Locale to capacity. I got to watch the pizzaioli toss dough, shape it, add toppings, put them in the oven, remove piping hot pizzas 75 seconds later, over and over again over the course of two hours. By the time I left at 11:30pm the place was still packed with a who’s who of the Boulder restaurant industry, all eager for a slice of the pie.
